Onyx & Amber Guest Blender #2 113.3 Proof IN/KY Bourbon

Onyx & Amber is proud to introduce Guest Blend Batch 2, an 8-barrel blend of bourbons distilled in Indiana and Kentucky and aged 10-13 years. Bottled at 113.3 proof, this limited release brings together mature oak, rich sweetness, and a beautifully balanced profile in a bourbon made to be poured, shared, and remembered.

This special release was blended by Bill and Dara Zeier, the husband-and-wife duo behind The Average Drinker, known for their honest, down-to-earth approach to whiskey. Bill and Dara are also multiple Double Platinum award winners in Fred Minnick’s ASCOT Awards, including a 2024 Best in Category Single Barrel Pick.

“We wanted this blend to feel like us,” said Bill and Dara. “Honest, thoughtful, full of character, and something we would be excited to pour for the people we love.”

After tasting through more than 30 barrels at Onyx & Amber, Bill and Dara spent months building Guest Blend Batch 2 from the base up. Their goal was never to make just another 10-plus-year bourbon. They wanted to create a whiskey with depth, warmth, and personality — the kind of bottle that makes you slow down, take another sip, and want to share it with someone else.

On the nose, Guest Blend Batch 2 opens with buttermilk waffle, rich French vanilla oak, and blueberry-blackberry jam. The palate is layered with brown sugar, butter, light cinnamon, vanilla wafers, and dark berries, followed by a subtle tingly effervescence reminiscent of cream soda. The finish is long and satisfying, with a full mouthfeel and lingering French vanilla oak.

“We didn’t want this blend to simply be good,” said the Zeiers. “We wanted it to have layers. We wanted it to be the kind of bourbon you keep coming back to because every sip gives you something a little different.”
